'A Food Safety Management System is the application of processes and systems in a food business, in order to prevent food-borne illness and to protect consumer health'.

What is HACCP?

HACCP stands for Hazard Analysis & Critical Contol Points. Essentially is is the process of identifiying possible threats to food safety, and setting acceptable limits for each, and systems and procedures to ensure food production stays within these safe limits.

A HACCP Plan is an on-going working document that must accurately reflect what actually happens in your business. It is really a central index or reference point for a Food Safety Management System, it is part of a total FSMS, it is not THE system on its own.

Food Safety and the current UK Law...

Since January 2006, a number of new food hygiene regulations have applied in the UK.

These comprise 'Regulation (EC) No. 852/2004' on the hygiene of foodstuffs, and 'The Food Hygiene (England) Regulations 2006', plus equivalent regulations in Scotland, Wales & Northern Ireland.

These now state that ALL UK food and drink businesses must put in place ‘food safety management procedures’ and keep up-to-date records of these.
